Sooji ka halwa
This one is a quick and easy recipe. There are many small variations that you can make in this recipe. when you are in a mood for a quick Indian sweet this recipe comes to your rescue. Or have a fufilling breakfast and serve halwa with poori .
I have been making this for a long time now and for almost every auspicious occasion or pooja . Specially for ashtami pooja during navratri make it with kala chana and poori.
Ingredients :
Sooji / Rawa - 1 cup
Sugar - 3/4 to 1 cup (depending how sweet you like your halwa)
Ghee - 1 cup (measure melted ghee)
Water - 3 1/2 cup (or mix half water and half milk for richer & thicker texture)
Cardamom - 2-3 crushed (or 1/2 tsp cardamom powder)
Raisins - 1 tbsp
Dry-fruit of your choice (Cashews / Almond / Pistachio ) - 2 tbsp
saffron - few strands - dissolve in 1 tbsp of water (Optional)
Method :
1. Boil water, add sugar & cardamom to it. Stir to dissolve sugar and turn off the heat.
2. Heat a thick bottomed pan heat ghee and add sooji and stir on low-medium, til the sooji turns golden brown. it will start leaving sweet aroma.
3. Add the sugar water and keep stirring on low heat. Add saffron water, raisins and half of chopped dry fruits..
4. Cook covered for 2-3 mins. Turn off the heat and let it rest for a few mins. The sooji will absorb water as halwa cools.
5. Garnish with cashews and almonds and serve hot or cold.
Note :
* when you add water it will splatter. Don't get scared it will calm down in a moment.
* You can use saffron in the end also only for garnish
* You can add chopped dryfruits while adding raisins.
* Use milk instead of water for getting a thicker barfi like texture
* Add cardamom either to water or to sooji just before putting water in it
