Jeera Biscuits | Cookies
The perfect tea time snack, these biscuits are soft and crispy at the same time.
My dad doesn't like sweet biscuits or cookies, and jeera biscuits are his favorite. So I have tried multiple recipes to get those perfectly crisp and soft jeera biscuits. Well TBH, I failed a few times, but this one is a foolproof recipe.
Enjoy it with your cup of tea or just munch whenever you like.
Ingredients:
Maida / All purpose flour - 1 & 1/2 cup
Salted Butter - 1/2 cup
Powdered sugar - 3 tbsp
baking soda - 1/4 tsp
baking pd - 1/2 tsp
Milk - 2-3 tbsp
Jeera/ cumin seeds (dry roasted) - 2 tsp
salt - 1/2 tsp
Method:
- Take room temperature butter in a bowl. Add sugar to it.
- Beat the butter and sugar till fluffy. About 4-5 mins with a wooden spoon.
- Mix flour, baking pd, baking soda, salt and 1.5tsp jeera.
- Save 1/2 tsp jeera for sprinkling.
- add flour mix to butter and gently mix.
- Now add 2 tbsp milk and using your hands bring the dough together.
- Rest the dough for 10-15 mins.
- Divide dough in 2 parts. Dust the surface with flour and roll the dough to 1 cm thickness.
- Sprinkle some jeera on top and lightly roll once.
- Using cookie cutter cut the desired shapes.
- Bake in a preheated oven for 18-20 mins at 180℃
Notes :
*Use dry roasted jeera for better taste and flavor
*Use butter at room temperature
*Use finely powdered sugar
*If using unsalted butter increase the qty of salt
*If you don't have cookie cutter, use steel katori or bottle cap.
*Remember we DO NOT need to knead the dough. Just bring it together.
*If you are staying in warm whether, rest the dough in refrigerator.
*While baking check after 15 mins as every oven behaves differently
*I have used 2 tbsp milk, but if your dough is too dry add 1 tbsp more. Not more than 3 tbsp milk required.

Beat till the color changes to light pale yellow |
Mix all dry ingredients |
Add flour mix to butter |
Add milk and bring together to form a crumbly dough |
After resting the dough, take half of it |
roll to 1 cm thick |
sprinkle some jeera and then cut in desired shape |
place on baking tray and bake for 18-20 mins |
you can see the crispy texture |
