Mixed berries compote

This is one of my favorite things to make and keep. Super simple but very diversely useful. Top it on yogurt, french toast, ice cream, panna cotta, cheesecake, toast, waffles, pancake, oatmeal, crackers etc. the possibilities are endless. Follow  @shugarNspices  on Facebook Follow  shugar_n_spices  on Instagram Ingredients : Mixed berries - 1.5 cups ( I used frozen)  Sugar : 2 - 3 tbsp Lemon zest - 1/2 tsp  Method :  In a sauce pan heat the berries. bring to boil.  Add sugar and mix. Reduce the heat to medium and cook for few minutes. Using a potato masher or fork or your spatula, mash a few berries. but leave a few chunks.  add lime / lemon zest and mix.  Now simmer and keep stirring.  Cook till you are left with half the quantity (3/4 cup) Remove from heat and let it cool completely.  Notes : No need to thaw or chop frozen berries. from freezer to pan.  If using fresh berrie...

Zucchini Toast | Open Sandwich

This is a very simple recipe. I like experimenting with different types of flavors and types of cheese and I personally like this combination a lot and hence penning it down. Ingredients : 1 Zucchini thinly sliced (32 slices) oil to saute zucchini - 1-2 tbsp Gouda cheese - mozzarella cheese - salt pepper dries mixed herbs, dried oregano, mango curry spread and garlic sauce (sauce of your choice) - 2 tbsp of each Bread slices - 2 ghee or butter - 1-2 tsp Method : Saute zucchini in little oil in a frying pan Slightly heat the bread slices on on side only on the heated side apply the sauce or spread of your choice add Gouda cheese Spread out zucchini slices ( closely packed) Sprinkle salt, pepper, mixed dried herbs, and dried oregano. Top with some mozzarella cheese. In the pan brush some ghee or butter. Place the toast on it and cook it covered for 3-4 minutes on low-medium heat. Yoghurt and Granola Parfait

Ingredients : Greek yoghurt - 1 cup granola (home made or store bought) - 1 cup whipped cream (optional) - 1/2 cup Fresh Fruits of your choice (i used kiwi & strawberry) - 1/2 to 1 cup, chopped powdered sugar (optional) - 1 to 2 tbsp Method : Fold in yogurt and half of whipped cream. If using only yogurt just whip the yogurt. Coat the fruits in powdered sugar. In a small glass pipe out the yogurt.  Pour a layer of fruits Pour granola layer and fruits again pipe yogurt Repeat the layers Pipe a little whipped cream and garnish with chopped fruits and a slice of strawberry Notes: *Don't make the parfait way ahead of serving else granola will become soggy. *If fruits are sweet you can skip sugar. *Adjust sugar quantity based on sourness or sweetness of fruits you are using *Used chilled yogurt and cream

Paneer Bhurji

Paneer bhurji or Scrambled cottage cheese is one of the easiest paneer recipe and a quick one too. It is also very healthy. It can be used as a filling for paneer paratha, paneer sandwich or rolls. Else just serve it with roti, pav or plain paratha . If you are going to use it as a stuffing for paratha, skip the milk/cream and try to keep it as dry as possible. This will make rolling the stuffed parathas easier. Sooji ka halwa

This one is a quick and easy recipe. There are many small variations that you can make in this recipe. when you are in a mood for a quick Indian sweet this recipe comes to your rescue. Or have a fufilling breakfast and serve halwa with poori . I have been making this for a long time now and for almost every auspicious occasion or pooja . Specially for ashtami pooja during navratri make it with kala chana and poori . Ingredients : Sooji / Rawa - 1 cup Sugar - 3/4 to 1 cup (depending how sweet you like your halwa) Ghee - 1 cup (measure melted ghee) Water - 3 1/2  cup (or mix half water and half milk for richer & thicker texture) Cardamom - 2-3 crushed  (or 1/2 tsp cardamom powder) Raisins - 1 tbsp Dry-fruit of your choice (Cashews / Almond / Pistachio ) - 2 tbsp saffron - few strands - dissolve in 1 tbsp of water (Optional) Method : 1.
