Paneer Bhurji
Paneer bhurji or Scrambled cottage cheese is one of the easiest paneer recipe and a quick one too. It is also very healthy. It can be used as a filling for paneer paratha, paneer sandwich or rolls. Else just serve it with roti, pav or plain paratha.
If you are going to use it as a stuffing for paratha, skip the milk/cream and try to keep it as dry as possible. This will make rolling the stuffed parathas easier.
Ingredients :
Paneer - mashed - 200 gms
Onion - finely chopped - 1 medium
tomato - finely chopped - 1 medium
capsicum - finely chopped - 2 tbsp
green chili - finely choppe - 1
ginger garlic paste - 1 tsp
fresh cream - 2-3 tbsp
salt as required
Spices
Cumin (jeera) -1 tsp
Garam masala - 1/2 tsp
Roasted cumin भुना जीरा powder - 1/2 tsp
Kitchen king masala - 1/2 tsp
Red chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp
fresh coriander chopped - 1-2 tbsp
oil - 2 tbsp
Method :
- In a kadhai or thick bottomed pan heat oil. Add cumin seeds ans let it splutter.
- Now add onion, ginger garlic paste and green chili.
- Saute till onion turn light brown, now add capsicum and tomato and cook covered for 2-3 mins.
- Add all spices and saute for another 3-4 mins.
- Add mashed paneer & salt and mix well so that paneer is covered in spices properly and cook for 2 mins.
- Add fresh cream, mix and cook covered for 6-8 mins.
- In the end top with fresh coriander and serve with hot parathas.
Notes :
*Using fresh home made paneer is best for making bhurji. It will result in softer & tastier bhurji
*Always store raw paneer immersed in water in airtight box, in refrigerator.
*Ensure to crumble or mash paneer well, so that there are no pieces of paneer in bhurji.
*If cream is not available, you can add full fat milk. cook for longer if adding milk.
*You can also grate or blend the tomatoes, but i prefer finely chopped
*I have used mustard oil here, but you can use any refined oil too.
Heat oil and add jeera |

Saute onions |
In the mean time crumble/mash the paneer |
Add tomatoes and capsicum |
Mix and cook covered |
Add spices |
Add paneer and salt |
Mix properly and cook for a while |
Add Milk or cream |
Cook for a while |
Top with coriander and serve |
