Spiced Banana Chocolate Cake

Ingredients :

Whole wheat flour : 1/2 cup
All Purpose flour : 1/2 cup
Oats : 3/4 cup ( grind half cup and rest as it is)
Baking Powder : 1.5 tsp
Baking Soda : 1 tsp
Cinnamon : 1 tbsp
Ginger Powder : 1/2 tsp *
Coco Powder : 3 tbsp
Clove powder : 1/4 tsp *
Nutmeg : a pinch *
Salt :  pinch
Brown Sugar : 1/4 cup
White Sugar / Granulated : 1/2 cup
Over ripe Bananas : 2-3 mashed
Milk : 1/2 cup
Oil : 1/4 cup
Butter melted : 1/4 cup
Vanilla : 1/2 tsp
Flax egg / Eggs : 2
Chocolate chips / chunks : 1/2 cup
Walnuts : 1/4 cup to 1/2 cup



Method :

  1. Prep the flax egg and keep aside for 15 minutes. 
  2. Prep the cake tin - grease and cove with parchment paper or dust with flour.
  3. Preheat oven at 170 degree Celsius
  4. Using a blender or whisk or electric whisk, Mix butter and both sugars.
  5. Once done add oil and mix again.
  6. Add flax gel or eggs, and mix well for 2-3 minutes. 
  7. Add bananas and milk and mix. Add vanilla and mix. 
  8. In a separate bowl add ground oats, and remaining oats. Now sieve the remaining dry ingredients into this. (WWF, APF, Bpd, Bsoda, salt, spices, Coco powder). Mix everything together using a fork or wire whisk.
  9. In this add the wet mix in batches and mix using spatula. 
  10. After you get homogeneous mixture, add the chopped walnuts and chocolate chunks. (save a few for topping)
  11. give one final mix and pour in the prepared pan / tin. 
  12. bake for 45-50 minutes, till a knife / skewer comes out clean. 
  13. Once done take it out of oven and let the cake cool in pan for 2-25 minutes. 
  14. Take the cake out of tin and let cool completely on a wire rack. 

Notes
  • the *Spices are optional. You can make this cake without the spices too. 
  • Bananas should be over ripe.
  • Walnuts are also optional. 
  • Using combination of ground oats and whole oats gives a nice texture and bite. Don't skip this. 
  • To make 1 flax egg - take 3 tbsp of hot water, add 1 tbsp of flax meal (flax seed powder) , mix well and leave for 15-20 minutes. then in fridge for 5-10 minutes. you should get gel like consistency
  • Make sure all ingredients are at room temperature.
