Eggless chocolate cake
The recipe below is for one cake. I made 2 cakes and then arranged them in one
Ingridients :
For cake-
Maida - 1/2 cup
Cocoa powder - 3 tbsp
Baking powder - 1/4 tsp
Baking soda - 1/4 tsp
salt a pinch
water or milk - 1/4 cup
coffee powder - 1/4 tsp
vanilla extract - 1/4 tsp
powdered sugar - 1/2 cup
yogurt - 2 tbsp
buttermilk - 1/4 cup
oil 2.5 tbsp
For syrup-
water - 1/4 cup
Sugar - 1&1/2 tbsp
For Ganache-
heavy cream - 100 ml
semi sweet chocolate - 150 gms
cream - 2 tbsp for decorating
choco chips
Method :
- Sift all dry ingredients
 - Mix vanilla & coffee with water (or milk)
 - In a bowl whip yogurt and sugar
 - Add oil and whip for a few more minutes
 - Add buttermilk and mix.
 - Now add dry ingredients and coffee mix
 - Fold using spatula, do not overmix.
 - Grease a 6"-7"baking tin and line with parchment paper
 - Pour batter in the prepared tin and tap
 - bake in preheated oven at 180℃ for 25-30 mins
 - For syrup heat the water add sugar and mix
 - Take it off the flame as soon as sugar dissolves, rest and cool completely before using.
 - For ganache
 - Heat the cream in microwave or stove top. do not boil it.
 - Add chopped chocolate in it and let it rest for 2-3 minutes.
 - Now mix vigourously
 - if chocolate is not melted completely microwave again for 10 seconds.
 - Wait for cake to completley cool down before decorating
 - Place 1st cake on the bard or plate
 - brush a little simple syrup
 - apply ganache on the cake
 - Place second cake on top of it
 - apply ganache on tp and on sides
 - take fresh cream in a piping bag and draw horizontal lines on top
 - and using a toothpick drag vertical lines in one direction and then in opposite direction
 - stick choco chips on the side of cake
 
Notes:
*Use all ingredients at room temperature
*Make syrup beforehand
*For buttermilk in 1/4 cup milk add 1/4 tsp of vinegar and let it rest
*For ganache microwave intervals of 10 seconds, because chocolate tends to burn quickly
*you can a little butter around 1/2 to 1 tsp in ganache for a nice glaze
