Paneer Paratha




Ingredients:

For Dough:
Wheat Flour - 2 cups
Salt - 1 tsp
Ajwain - 1-2 tsp 
Red chilli powder - 1 tsp 
Oil - 1 tbsp
Water - as needed

For filling:
Onion finely chopped - 2 tbsp
Oil - 1 tsp
Jeera - 1/2 tsp
mashed Paneer - 1/4 cup
Salt - 1 tsp or as per taste
Finely chopped green chilli - 1/2 tsp
turmeric pd - 1/4 tsp
coriander pd - 1/2 tsp
jeera pd - 1/2 tsp
garam masala pd - 1/2 tsp
kitchen king masala - 2/2 tsp
amchur - 1/2 tsp
fresh coriander - 1 -2 tsp

Ghee for frying paratha

Method:
  1. Mix well all dough ingredients except water. Now add water little by little and knead dough.
  2. Keep aside and prepare stuffing.
  3. In a pan heat oil. Add jeera
  4. Once it splutters add onion and saute for 2-3 mins
  5. Add all spices and salt, mix well
  6. Add mashed paneer and mix.
  7. Finally add chopped coriander and let the filling cool
  8. Take ball sized dough and roll in a small disc with center thicker than the edges.
  9. Place 2 tbsp of filling and close holding the edge together.
  10. Dust some flour and roll again.
  11. Cook on tawa/ skillet on medium to high flame.
  12. Apply ghee on both sides while cooking.
  13. Serve hot with pickle and curd.


Notes:
*You can grate or mash the paneer
*Works best with homemade paneer
*Adjust the chili and salt as per your taste
