Zucchini Toast | Open Sandwich





This is a very simple recipe. I like experimenting with different types of flavors and types of cheese and I personally like this combination a lot and hence penning it down.


Ingredients :

1 Zucchini thinly sliced (32 slices)
oil to saute zucchini - 1-2 tbsp
Gouda cheese -
mozzarella cheese -
salt pepper dries mixed herbs, dried oregano,
mango curry spread and garlic sauce (sauce of your choice) - 2 tbsp of each
Bread slices - 2
ghee or butter - 1-2 tsp


Method :

  1. Saute zucchini in little oil in a frying pan
  2. Slightly heat the bread slices on on side only
  3. on the heated side apply the sauce or spread of your choice
  4. add Gouda cheese
  5. Spread out zucchini slices ( closely packed)
  6. Sprinkle salt, pepper, mixed dried herbs, and dried oregano.
  7. Top with some mozzarella cheese.
  8. In the pan brush some ghee or butter. Place the toast on it and cook it covered for 3-4 minutes on low-medium heat.
  9. Serve hot

Notes:
  • This is a very flexible recipe - 
    • use sauces of your choice, 
    • use cheese of your choice, 
    • saute zucchini as per your liking (i like it charred)
    • use oil (fat) of your choice
  • Use a pan with lid, last step its important to cook with lid on
