I generally do a lot of vegetarian (Egg-less) cakes, but this was my first try on a vegan cake and it came out unbelievably soft and delicious.


Ingredients:

  • Oranges : 2-3 (for juice and zest)
  • Orange juice : 1/2 cup 
  • Orange Zest : 2 Tsp
  • All Purpose Flour : 200 gm (around 1 & half cup + 2 Tbsp)
  • Baking Powder : 1&1/2 Tsp
  • Baking Soda : 1/2 Tsp
  • Sugar : 3/4 cup (around 100 gm)
  • Yogurt : 1/2 cup
  • Oil : 1/2 cup

Method:
  1. Preheat oven to 350 ℉ or 180 ℃.
  2. Sieve Flour + BP + BS twice. 
  3. Prep 8 inch baking tin or 12 cupcakes tray (grease and line with parchment paper/ muffin cups)
  4. In a bowl take yogurt, add sugar in it and whisk well for few minutes; till its creamy & airy. 
  5. Add oil to it and whisk again for few minutes
  6. Add orange juice and zest and mix well. 
  7. Add dry ingredients in 3 batches and fold with spatula till no lumps. Do not over-mix. 
  8. Pour in prepared tin or cupcake tray, tap on counter 2-3 times.
  9. bake for 40-45 mins for cake and 20-25 minutes for cupcakes.
  10. Let it cool for 5 minutes in the tin, then unmould and cool completely on wire rack.
  11. Enjoy with or without frosting.

Notes:
  • Make sure all ingredients are at room temperature
  • Whisk the yogurt and sugar mix really well. You can electric beater for this. 
  • Use fresh organic oranges for best result
  • After adding flour, DO NOT over-mix the batter
  • Check after 35 mins by inserting a skewer. (15 mins for cupcakes)
