Vegan Orange Cake / Cupcakes
VEGAN ORANGE CAKE
VEGAN ORANGE CUPCAKES
I generally do a lot of vegetarian (Egg-less) cakes, but this was my first try on a vegan cake and it came out unbelievably soft and delicious.
Ingredients:
- Oranges : 2-3 (for juice and zest)
- Orange juice : 1/2 cup
- Orange Zest : 2 Tsp
- All Purpose Flour : 200 gm (around 1 & half cup + 2 Tbsp)
- Baking Powder : 1&1/2 Tsp
- Baking Soda : 1/2 Tsp
- Sugar : 3/4 cup (around 100 gm)
- Yogurt : 1/2 cup
- Oil : 1/2 cup
Method:
- Preheat oven to 350 ℉ or 180 ℃.
- Sieve Flour + BP + BS twice.
- Prep 8 inch baking tin or 12 cupcakes tray (grease and line with parchment paper/ muffin cups)
- In a bowl take yogurt, add sugar in it and whisk well for few minutes; till its creamy & airy.
- Add oil to it and whisk again for few minutes
- Add orange juice and zest and mix well.
- Add dry ingredients in 3 batches and fold with spatula till no lumps. Do not over-mix.
- Pour in prepared tin or cupcake tray, tap on counter 2-3 times.
- bake for 40-45 mins for cake and 20-25 minutes for cupcakes.
- Let it cool for 5 minutes in the tin, then unmould and cool completely on wire rack.
- Enjoy with or without frosting.
Notes:
- Make sure all ingredients are at room temperature
- Whisk the yogurt and sugar mix really well. You can electric beater for this.
- Use fresh organic oranges for best result
- After adding flour, DO NOT over-mix the batter
- Check after 35 mins by inserting a skewer. (15 mins for cupcakes)
