Jaamun Popsicle | Java plum posicles | Ice pop

Ingredients: Jaamun - 250 gms Mint leaves - 15-20 Water - 3 cups  Salt - 1/2 tsp Sugar - 5-6 tbsp Roasted cumin powder - 1 tsp Chat masala - 1 tsp Lemon juice - 2 -3 tsp Kala namak - 1/2 tsp Method: Boil water. Add salt sugar and jaamun to it and let it boil for 5-6 mins till jaamun becomes soft. Add mint leaves and boil for 5 more mins. Let it cool. Now sieve the mixture and mash the jaamun with your hand to get as much pulp out as possible. Discard the leaves, seeds and  jaamun skin. Add remaining ingredients to the concoction.  Mix well. Increase the sugar if required. Pour in moulds and freeze for 7-8 hours or overnight. Notes: The amount of sugar depends on your taste Sprinkle some chat masala after unmoulding while serving It gives a sweet and sour taste like kala khatta.

Whole wheat jaggery peda | Aata aur gud ka peda

Ingredients: whole wheat flour - 1 1/2 cup  Jaggery - 200 to 220 gms water - 120 to 130 ml ghee - 1 tbsp cardamom powder - half to 1 tsp dry fruit for garnishing - 8 almonds or cashews Method: Dry roast the flour on low flame and keep stirring. Roast it till it gives nice aroma around 15 mins Remove from heat allow it to come to room temperature. In another pan heat jaggery and water, on high flame till mixture comes to boil. Then reduce to medium flame for 6-8 mins. Add cardamom powder. mix properly and remove from heat. Sieve the jaggery syrup before mixing with flour Now pour half the syrup on the flour and mix with spoon or using hands. Mix properly and rest of the syrup and mix. Do not knead too much just mix so that dough comes together. Now add ghee and knead for a few seconds. Take about one and half tbsp of dough and shape in form of peda. Garnish with halved cashew or almond. Let it cool completely and store in airtight container. Note:

Oats and Cinnamon pancakes

Ingredients: Whole wheat flour - 1/2 cup Oats - 1/3 to 1/2 cup Baking powder - 1 tsp Brown Sugar - 1 tbsp Cinnamon powder - 1 tsp pinch of salt - skip if using salted butter Egg - 1   Milk - 1/2 cup Yogurt - 3 to 4 tbsp vanilla extract - 1/2 tsp For the drizzle (optional) butter melted - 1 tbsp cinnamon powder - 1/2 tsp brown sugar - 2 tbsp To Serve Fresh fruits Honey or Maple Syrup Recipe: In a bowl add dry ingredients and give a good mix. (flour + oats + baking pd + cinnamon + sugar + salt) Now add egg and mix Add yogurt, mix Add milk and vanilla extract, mix to get a pouring consistency If you are using the cinnamon rolls drizzle mix butter, sugar and cinnamon and keep aside. Now grease a pan with butter, pour the mix on hot pan and cook for 3-4 mins on each side till golden brown.  If using drizzle add it in spiral shape on the pancake before flipping (see image below) Stack the pancakes on a plate and top with honey or maple syrup and lot

Oats and Yogurt Parfait

Ingredients: Oats - 1/2 cup or 8-9 tbsp Yogurt or hung curd - 1/2 cup  Fresh fruits - 1/2 cup (I have used kiwi and strawberry) Chocolate Ganache - 1-2 tbsp Nuts - 1 tbsp (i have used walnuts, almonds and pistachios) Sugar or Honey - 2-3 tsp Recipe: Dry roast oats in a non stick pan. Keep 4 tbsp and mix rest with ganache. Mix sugar or honey with yogurt / hung curd. Chop fresh fruits and sprinkle some sugar and leave for 5-10 mins Dry roast Nuts and chop Time to assemble In a glass or jar start with a layer of roasted oats. Add yogurt and top it with fresh fruits layer Now add the ganache oats mixture Garnish with chopped nuts and a dollop of yogurt Note: You can use greek yogurt or hung curd. Need to remove the water from regular curd so keep it in muslin cloth on sieve for at least an hour You can use fruits of your choice, avoid melons You can use any dry fruits or nuts of your choice You can prepare all ingredients in advance but assembl
