Pav | Sliders







Ingredients :

  • All Purpose Flour : 200gms
  • Whole wheat Flour : 100 gms
  • Instant yeast : 1/2 tsp
  • Milk Powder : 1.5 tbsp
  • Milk :200 ml ( +  2-3 tsp for brushing)
  • Water : 50 ml
  • Sugar : 1 tsp
  • Olive Oil : 2 tbp
  • Salt : 1-2 tsp
  • Butter : a little for brushing

Method :


  1. In a bowl mix APF, WWF, yeast and sugar. 
  2. Add luke warm milk and water. 
  3. Mix and knead it for around 15-17 minutes. Keep dipping your hands in oil, but don't add extra flour. Knead till you get soft and elastic dough. 
  4. Keep it in a well oiled bowl, cover and let the dough rise for 2 hours or till it doubles in size. 
  5. After 2 hours, punch the dough, add salt and knead again for 2-3 minutes. you can add 1-2 spoon of flour at this stage, if you are unable to handle the dough. 
  6. Divide dough in 9 equal parts ( I got 9 balls each weighing around 62-64 gms) 
  7. Roll each and shape in tight balls by bringing corners to the center and cupping it.
  8. Place them in a greased and prepared tray, leaving a little space between each pav. 
  9. Brush it with little milk. Cover and let it rise again for 30-40 minutes. 
  10. Preheat oven at 180 degrees.
  11. After pav has risen and puffed, apply milk wash again and bake for 22-25 mins. 
  12. Take it out of oven and aplly butter generously. 
  13. Remove from baking tray and let it cool on wire rack. 
  14. Enjoy with Bhaji, or make vada pav or any other slider recipes.

Notes:
  • Make sure mil + water mixture is lukewarm. too cold or too hot liquid will kill the yeast. 
  • Give enough time for proofing and rising the dough. Don't rush the process.
  • Proofing time will depend on the temperature, where you live. Warmer place, lesser time. 
  • You can use egg wash instead of milk wash.
