Bread loaf

Ingredients : Flour : 500 gms APF : 400gms WWF : 100 gms Instant yeast : 7 gms (approx. 2.25 tsp) Sugar : 1 tbsp Salt : 1 tsp Milk : 2.5 cups Water : 1/2 cup Butter : 2-3 tbsp (+extra for brushing) Flax meal : 2 tbsp (optional) Method :  In a bowl mix flours, yeast, sugar and flax meal (if using).   Add warm milk and water and mix well with spatula.  The dough will be sticky but don't worry it will come together.  Transfer to a surface or board and knead for 15-20 minutes. Stretch and pull. Keep bringing the edges in the center while kneading.  Keep adding butter while kneading. After kneading for 15 minutes dough should be manageable. In the final 5 minutes keep tucking the dough in itself towards the bottom.  You should get a smooth top. Place it in a oiled bowl, drizzle some oil on top also and cover and rest for 2 hours, or till the dough doubles in size.  After 2 hours, punch the dough add salt and knead again for 3-5 minutes.  Lay it flat

Eggless Carrot Cake

Carrot Cake I have tried carrot cake numerous times, with shredded carrots / grated carrots, with eggs, but was never satisfied. But this recipe is just perfect..!! Less work and better results. The combination for citrus zest and spices makes it even more delicious. Also check us out on  Facebook  and Instagram Ingredients :   Carrots : 250gms (roughly diced - around 2 cups) Flax Eggs : 2  Oil : 1/3 cup Butter : 1/4 cup (melted and unsalted) Sugar : 3/4 cup Lemon / Orange zest : 1.5 tsp Vanilla Extract : 1/2 tsp Buttermilk : 1/4 cup Flours : total 2 cups Whole Wheat Flour : 1 cup All purpose Flour : 1 cup Bkaing Powder : 2 tsp Baking Soda : 1/4 tsp Salt : a pinch Cinnamon powder : 1 tsp Nutmeg : a pinch (grated or powder) Milk : 2-3 tbsp (optional)  Method : Grease and prep your pan. Kada Prasad | Atta Halwa | Wheat Flour Pudding

Kada Prasad It is a very simple and basic recipe. It follows the ratio of 1:1:1:3 for flour:sugar:ghee:water. A traditional sweet that is being served in Gurudwara for ages. Ingredients :  Whole wheat flour : 1/4 cup Sugar : 1/4 cup Ghee : 1/4 cup (measure melted ghee) Water : 3/4 cup Cardomon (optional) : a pinch of cardamom powder Dry fruits of your choice (optional) - chopped almonds and cashews : 2-3 tbsp Method : Heat ghee in a pan. Add flour and mix.  Cook it on medium heat for a few minutes. Keep stiring in between. In the mean time heat water and sugar in another pan. We dont need to make syrup, just heat till sugar dissolves. Cook flour on high for 2-3 minutes, and turn back heat to medium-low.  Turn off heat of the sugar mix.  Cook it till you get a nice brown colour.  Add sugar water mix to the flour mix, and keep stirring. It will bubble up, dont get afraid, it will calm down within a few seconds.  Mix for a minute or two. turn off th

Bechamel Sauce | Basic white sauce

Ingredients: Butter : 3 tbsp  Flour : 3 tbsp Milk : 3 cups Salt and pepper to season  Bay leaf : 1 (optional) Nutmeg grated : a pinch (optional) Method: In a pan, heat milk with bayleaf for a few minutes then discard the bayleaf. In another pan, heat butter, as it melts add flour and stir/mix using spatula or spoon.  Keep the flame low to medium. We don't want flour to be raw but it should not burn nor change color. After few minutes add warm milk and keep stirring with the whisk so that there are no lumps. Start with a little milk at a time, once you get a homogenous mixture add rest of the milk Boil for a few mins, add salt and pepper to season. Add a pinch of grated nutmeg in end.  Notes: Using bay leaf is completely optional.  you can also use half onion in place of bay leaf or both. Keep stirring the sauce to avoid burning and to avoid any lumps. Although recipe call equal amount of butter and flour, i like to add little extra butter f

Ingredients : All Purpose Flour : 200gms Whole wheat Flour : 100 gms Instant yeast : 1/2 tsp Milk Powder : 1.5 tbsp Milk :200 ml ( +  2-3 tsp for brushing) Water : 50 ml Sugar : 1 tsp Olive Oil : 2 tbp Salt : 1-2 tsp Butter : a little for brushing Method : In a bowl mix APF, WWF, yeast and sugar.  Add luke warm milk and water.  Mix and knead it for around 15-17 minutes. Keep dipping your hands in oil, but don't add extra flour. Knead till you get soft and elastic dough.  Keep it in a well oiled bowl, cover and let the dough rise for 2 hours or till it doubles in size.  After 2 hours, punch the dough, add salt and knead again for 2-3 minutes. you can add 1-2 spoon of flour at this stage, if you are unable to handle the dough.  Divide dough in 9 equal parts ( I got 9 balls each weighing around 62-64 gms)  Roll each and shape in tight balls by bringing corners to the center and cupping it. PAV BHAJI Follow  @shugarNspices  on Facebook Follow  shugar_n_spices  on Instagram *Please do go through the notes in the end, before starting to prepare the bhaji Ingredients : Onion : 1 - chopped + 1 for serving Tomato : 3 - chopped or pureed Green capsicum : 3 tbsp chopped Potato : 3 - boiled and mashed Peas : 1/2 cup Carrots :  3/4 cup Beans : 1/2 cup Caulflower : 1/2 cup Red capsicum (optional) : 1/4 cup Oil : 2 tsp Butter : 4 tbsp Green chili : 2 tsp finely chopped Ginger garlic paste : 1-2 tsp Fresh green coriander : 3-4 tbsp - finely chopped Spices : Turmeric : 1/4 tsp Kashmiri red chili powder : 3 tbsp Corainder powder : 2 tsp Pav bhaji masala : 4 tbsp Salt : 2-3 tsp Onions, lemon juice, butter, fresh coriander to serve Method : In a pan or kadhai, start by heating oil. add 2-3 tb sp of butter. Once hot, add chopped onions. Saute for 5 mins.  Add ginger garlic and green chili. cook this for 7-8 minutes on medium heat.  Add fine
